Tom Kha Gai (Chicken soup in coconut milk)

Tom Kha Gai is the most favorite Thai coconut chicken soup

It is really tastety and easier to make than you think

The main ingredient for Tom Kha Gai is galangal (kha)

Ingredients:
*serving 2 person*
  • 1 chicken breast (cut into smaller pieces)
  • Tom Kha-Gai
    1 can of coconut milk
  • 2 lemon grass (cut into long pieces and crushed lightly)
  • 4-8 pieces fresh or dried galangal (thinly sliced)
  • 3-4 kaffir lime leaves
  • 1 group coriander or cilantro (cut 1 inch)
  • 3-4 tbsp fish sauce
  • 3-4 tbsp. fresh lemon or lime juice
  • 5 shallots, crushed
  • 5-6 small hot Thai chilli crushed
  • 10-15 pieces of mushroom (cut in half)
  • 1-2tbsp tom yum paste (optional)

Cooking Method:
  1. put a pot on the stove at medium heat.  Add coconut milk, wait till it's almost boil. Add the galangal, lemon grass, shallot and kaffir lime leaves. 
  2. add the chicken, let it simmer slowly over low heat. When the chicken is cooked, add mushroom
  3. add the fish sauce, lime juice, and chilies.
  4. stir gently, and when the soup returns to a boil, turn off the heat
  5. serve hot with steamed thai jasmine rice

    Tom Yum Goong (Hot and Sour Thai Soup)

    Tom Yum is the most popular Thai soup.  You can use either prawns, chicken or seafood for this delicious hot and sour soup. 

    It is easy to make, you can either used the ready made tom yum paste or Thai chili paste. Today we will use the ready made tom yum paste.  This broth of the soup an either be clear or dark. 

    In Thailand we use coconut, milk or cream to make it the darker style.

    Ingredients:
    *serving 2-3 person*
    Tom Yum Goong

    • 2 tbsp of tom yum paste or chilli paste (nam prik pow)
    • 1/4 can of coconut of 1/2 cup of milk (optional)
    • 4-5 pieces of lime leaves
    • 2-3 pieces of galangal
    • 2 lemongrass (chopped into 1 inch long pieces)
    • 5-10 pieces of cilantro (for garnish)
    • 10-15 mushroom (slice in half )
    • 1 celery stick (cut into smaller pieces, optional)
    • 1 tomato (cut into 4-6 pieces, optional)
    • 2-3 crush Thai chilli (optional)
    • 10-15 prawns
    • 2tbsp fish sauce
    • 2tbsp of lime juice
    • 1/2tbsp of sugar
    Let's get started:
    1. Put a pot onto the stove at medium heat, add about 3-4 cups of water
    2. Add the tom yum paste, along with the lime leaves, lemongrass and the galangal.  Let it boil.
    3. Add the prawns, mushroom and other vegetables, followed by all the sauces (fish sauce, lime juice and sugar)
    4. You may add milk or coconut milk if you want the soup to be darker color at this step
    5. Give it a taste, if it's not at your liking, add more sauce or more tom yum paste
    6. Garnish with cilantro
    *note tom yum soup should be slightly spicy with a slight sour after taste*
